Vincent Roussely represents the fourth generation in his family to care for the vines at Clos Roussely. Here in the village of Ange, the river Cher running below, Sauvignon Blanc of the Touraine appellation is the crop of choice, making up 80% of the overall harvest year to year. The soil is composed of clay and limestone with flint, perfect for Sauvignon production. Organically certified since 2007, no herbicides or pesticides are used in the eight-hectare vineyard, and the entire harvest is done by hand. The cellar is quite unique. Carved out of the tuffeau (the local chalky limestone that defines the region) beneath the vineyards, these halls are more than 250 years old, and rarely fluctuate in temperature. A modern addition to a classic Loire design, stainless steel tanks are housed inside the stone walls themselves, over a meter thick. All yeasts are naturally occurring, and only minimal sulfur is used at bottling. Their flagship Sauvignon Blanc is positively electric – crystalline citrus fruit with oyster shell mineral character and far more length than a wine this affordable has any business showcasing. Serve this alongside sashimi, spicy foods (especially Thai), or grain-based salads like tabbouleh.
