A tiny 8 hectare estate based in Corbieres, Faillenc Sainte Marie is located on the rocky hillside of Mont Alaric. Winds coming from both the north and off of the Mediterranean to the south create a dry climate that helps mitigate rot and disease allowing for sustainable farming practices. The terroir is composed of inhospitable, rocky limestone terraces. Only vines, olive trees and some scraggly brush survive under these harsh conditions. As a result, yields are naturally low. A beautifully aromatic field blend of Syrah, Grenache, and Cinsault that is manually harvested and aged entirely in tank. Elegant bramble berry and blackberry notes are coupled with earthy mushroom flavors. This concentrated red would pair very well with rustic cuisine like Cornish game hen, lamb chops, or classic Comte cheese.
