Made by the brothers Xabi, Iñaki, and Mikel Sanz, sons from a long family history of winemaking in Navarra. This is a classic Saignée Rosé exhibiting a bit more fruit and body than a typical Rosé. Saignée (“sohnyay”) means “to bleed,” and it involves pulling off some of the fermenting juice of a red wine after a few hours or more of skin contact, but before it gets fully red. Saignée is considered a byproduct of red winemaking because its primary function is to increase the concentration of red wines. However, a bigger, darker, and fuller bodied pink wine might be just what the doctor ordered depending on your mood or the food. We loved the supple cherry and strawberry laden core in this wine. Perfect for a plate of olives, roast vegetables, cured meats and soft, subtle flavored cheeses. Delicious chilled on its own as well. Also, the price! No pain and lots of gain.
