This hidden gem from the Domaine La Coume-Lumet is a perfect everyday table wine. This easy-drinking, aromatic and elegant white is comprised of predominantly Chardonnay with a small amount of Chenin Blanc (10%) fermented entirely in stainless steel tanks where the wine ages on the lees for about five months. Hailing from the Haute Vallee de l’Aude in southern France, right near the Pyrenees Mountains; an appellation that is little known but offers excellent value-for-quality wines. The dry higher elevation vineyards are perfectly situated for ripening Chardonnay. The Domaine La Coume-Lumet is committed to a future of regenerative farming with all their vineyards certified with Terra Vitis, France’s primary sustainable viticulture organization. This fruit forward wine is dry, medium bodied, with notes of green apple, passionfruit, and citrus flavors. Excellent paired with Comte cheese, seafood pasta dishes, or a classic Basque-inspired stew: Chicken Chilindron.
