This is the quintessence of Chardonnay from the Mâcon region of southern Burgundy. Ripe orchards fruits, apples and pears with touches of lemon zest along with wonderful leesy notes reminiscent of fresh bread dough. All of it tightly knit together with a mouth-watering acidity and a long finish echoing all these elements. Sometimes a wine just startles you with how delicious it is, and this is that kind of wine. Each sip a revelation, it never fades into anything less than remarkable. Owner and vigneron Olivier Giroux owns 1.6 hectares of 40-year-old Chardonnay in En Pres Forêt in Macon Loche, situated at 240 meters altitude with sandy, stony soil atop schist mother-rock. Aged 90% in stainless steel and 10% in used 500-liter oak barrels, this cuvée is both generous and elegant, with a pronounced saline streak and the ability to evolve well for a decade or more in bottle. You can drink this Chardonnay with so many dishes – shellfish, oysters, soft cheeses, roast or braised chicken, a charcuterie plate, salmon, lobster bisque and on and on…..
