A lot of rosés dash quickly down the throat, sprinkling a few candied red fruits along the way; Gavoty’s caress the palate, with rich but nimble fruit fused to an underlying salinity, and finishes that blossom and linger. This is the kind of rosé that ignited interest in the appellation in the first place.” Roselyne Gavoty is a resolute opponent of the sort of insubstantial, commercialized, boring rosé wine that large producers are pumping out literally millions of gallons a year of. Part of the secret here is that this wine is a roughly half-and-half blend of saignée (deeper in color, richer, more flavors of bramble and red fruits) and first press (lighter, cleaner, more aromatic; more typical for Provence rosé) juice, vinified separately to give her more control over the properties of the final product. The result is, as you might guess, a wine with the freshness and aromaticity of good Provence rosé, but with a depth and complexity difficult to find outside of, say, Bandol.
