Philippe Vatan, now accompanied by his daughter Agathe, oversees this domaine of 20 hectares from a fairytale château on the banks of the Loire. Set into the white chalk cliffs (referred to as Tuffe, the wine’s namesake), the château is a fitting symbol of the winery’s excellence. Philippe has achieved much over 25 years of incremental improvement, most importantly his gradual move to organic farming. Initially skeptical, he became convinced that organic practices brought a new level of nervosity and freshness to the wines. “Hureau” is a fitting name for the property: it means “old wild boar,” and their wines do indeed have a regal, feral nature in them: an expression of 70-year-old Cabernet Franc vines. The chalky soil imparts fresh mineral salinity with brambly richness and supple tannins to go with Cab Franc’s telltale vegetal savories (though fully ripe and never green). “Tuffe” will pair especially well with grilled meats, hard aged cheeses, or tomato-based sauces.
