Semillon is the traditional, premium white grape of New South Wales’ Hunter Valley. This extremely versatile grape variety is typically harvested a bit early in the Hunter, highlighting its fresh citrus and green apple notes and vibrant acidity. The lower sugar levels in early harvested grapes results in a lower alcohol wine - this wine comes in at 11.5% alcohol by volume. It can be enjoyed young in this style, or with substantial bottle maturation, showing attractive creamed honey and toasty notes when aged for 10 to 20 years. The fruit was hand harvested, crushed, chilled and pressed immediately. Neutral yeasts were used for the fermentation to preserve the fresh fruit flavors and avoid phenolics. Bottled in May. No oak and no malolactic fermentation; aged in stainless steel to retain the crisp acidity. Vibrant in color with beautiful hints of green apple. Vibrant aromas of lemon grass, lemon basil and pear aromas. Mouth filling flavors of fresh green lime and pineapple sorbet that accentuates a zesty acid backbone. The citrus notes linger on the palate. A wonderfully classic Hunter Valley Semillon to enjoy now or age gracefully.
