Ricardo Zanotto was born in Conegliano, the heart of Prosecco country – the man’s very blood is sparkling! His winery specializes in the various styles of Venetian sparkling wine, be it true Prosecco Valdobbiadene, Col Fondo Pet-Nat, and everything in between. “Rivolto” is a great example of that “in between.” Not quite Prosecco, it’s comprised of 85% Glera and 15% a field blend of local varieties. This bubbly features the pleasant twinge of golden apple sweetness up front that draws Prosecco lovers worldwide, but with a unique, crisp and citric backbone to go with its sizzling, creamy mousse. This is a great aperitif on its own or a worthy base for a cocktail, but it will also toast swimmingly alongside cheesy hors d’oeuvres and charcuterie, smoked fish, and caviar.
