The Taubenschuss winery, founded 1670, is an historical estate. There is true generational knowledge built up from a succession of vignerons, each iteration building on the experience of the previous. The learned credo is near-natural, sustainable viticulture with a conscious focus on the use of herbicides, no insecticides, or commercial fertilizers. Own compost production is used for organic fertilization in the vineyards that are also grazed by sheep. This is next level, single vineyard, Grüner Veltliner from their ‘Ried Neidharden’ site. On the nose there is orchard and citrus fruits, light touches of white pepper and apple blossom. There is a lovely succulent mouthfeel that finishes with a mouthwatering acidity that leaves the palate asking for food. An allrounder at the table, try this wine with typical Austrian cuisine like Tafelspitz (boiled beef) or Backhendl (fried chicken). But it also serves as a friend for aromatic Asian style dishes.
