Young winemaker Maria Jover rolled out her Parajes del Valle project in 2018. It’s a unique concept for the area; rather than a formal “estate,” complete with historic bodega, contiguous vineyards, and an on-site winery operation, Parajes is more an homage to the land and greater area of south-central Spain, west of Valencia. Maria is a proponent of the traditional Terraje system of vine management, wherein vineyards are rented to small farmers to manage in exchange for a small percentage of fruit in return. These holdings are spread over a wide swath of land from Manchuela south to Jumilla. All farming is strictly organic. The Rosado, made entirely from the local Bobal variety, is a stellar rendition of the burgeoningly popular deeper-hued rosé style, bursting with tones of forest fruits, mountain herbs and tingly acidity and finishing fully dry. This wine is especially well-suited to enjoy with sausages off the grill, salads topped with a protein (steak tips, salmon, even beets), or paella.
