A wine for all seasons, Loire Valley Cabernet Franc is typically light enough on its feet to taste great even during warmer months. And there is almost no red wine that is more versatile with food. Domaine de la Commanderie, an estate in the heart of Touraine, is well known for its production of classic Cabernet Franc under the Chinon designation. Honorine Pain grew up on the estate where her father is proprietor and wine maker. With her sister Clothehilde, she runs the business side of winery operations. In addition, Honorine has her own wine label that bears her nickname, #Ono. Honorine’s version of Cab Franc leans to the modern. It’s loaded with attractive flavors of black and red fruits that are accentuated by herbal notes that are typical of the grape variety. This would be great with grilled vegetables, lasagna and lamb chops. It was spectacular with a dinner-sized green salad topped with blue cheese, candied pecans and dried cherries.
