Franciacorta is the true king of Italian bubbles. Made in the laborious traditional method (metodo classico in Italian) rather than the Charmat method employed in Prosecco, Franciacorta offers a complexity and luxury akin to Champagne. A 14-hectare affair of Chardonnay and Pinot Noir, the Franciacorta of Monzio Compagnoni punches well above its weight: expressive, complex, and expertly crafted. The late Marcello Monzio Compagnoni, a true lover of metodo classico and drawing on a long winemaking tradition at his family estate in nearby Valcalepio, brought on top oenologist Donato Lanati to oversee the technical process of ushering the grapes from vine to bubbles, and his scientific approach in the winery (and, in fact, his laboratory) makes for tremendously focused renditions of Franciacorta. The Brut ‘Alla Moda’ is comprised of 90% Chardonnay and 10% Pinot Noir and is the wine connoisseur's bottle of bubbly through and through. Less about fruit (though tart peaches can be found) and more mineral driven than some of its peers, the emphasis here is on cut and salinity with a yeast expression of crusty bread. Try it with quiche or other egg dishes, fried foods (especially chicken), and alongside caprese salad with burrata.
