The world is awash with somewhat pleasant, but also unremarkable, Pinot Grigio from northeast Italy. That is not, however, how we would characterize this white from the Alto Adige which is remarkable for its aromatic intricacies and silken textural mouth feel. A blend of Pinot Blanc 43 %, Chardonnay 36 %, and Sauvignon Blanc 21 %, the La Manina fills the mouth with a suave, complex richness that nonetheless feels light-on-its-feet finishing clean and refreshing with a mouth-watering sapidity. Certified organic, the grapes in the La Manina were de-stemmed and left to macerate in the press for six hours to extract aromatic compounds from the skins. Fermentation took place in oak and stainless-steel tanks with yeasts naturally occurring in the vineyard. The young wine was subsequently matured on the fine lees for six months, adding textural weight, aromatic complexity, and to enable the aromas and flavors to harmonize before bottling. Bright yellow with greenish tints in the glass, this wine shows aromas of quince, lychee and pink grapefruit that intermingle with herbal scents of sage and mint. Enjoy this beautiful white with a fillet of salmon, baked ham, or a roast chicken.
