Current winemaker Julia Cattrall has deep roots in the Willamette Valley wine industry. Her work in viticulture began at the tender age of seven, learning organic viticulture from her father at the Cattrall Vineyard in the Eola-Amity Hills. She augmented her own experience with years of research about the viticultural practices in Burgundy as well as some hands on experience in New Zealand. Now, Julia is crafting beautiful wines in the Willamette Valley that are classic examples of Pinot Noir balancing fruitfulness, savory components and the inimitable sous bois found in the finest Pinot Noir the world over. Sous bois means undergrowth and is the term used to describe the leafy and mushroom aromas of the forest floor. This wine is crafted from thoughtfully selected vineyards across Oregon’s famed Willamette Valley. Made using minimal intervention and fermented with native yeasts, this wine shows a bright ruby hue in the glass with aromas of cherry blossom, dark plum, and ripe raspberry. On the palate, you’ll find fresh red berries, hints of basil and walnut, and a gentle lift of cherry spice—all wrapped in a silky, balanced finish. A perfect wine to serve as an aperitif or with a charcuterie platter or, even better, to wash down Marcella Hazan’s simple and delicious recipe ‘Roast Chicken with Lemons’. She introduces her recipe with this sentence “Were I to choose a dish to show how the simplest cooking can also be the most sublime, I would take this one.”
