One of the best white wine grapes now widely planted in Sicily, Grillo, is capable of withstanding high temperatures hence its utility for  Sicilian winemaking. Originally Grillo was used as the main grape for the production of the famous fortified wines from Marsala. So when you make your Chicken Marsala it is mostly Grillo in the sauce. Its origins are uncertain, but it may have been introduced onto the island of Sicily from Apulia, the “heel” of the Italian boot where it was widely planted by the late 19th century. In addition to Marsala, Grillo is gaining notoriety as one of the better dry whites from Sicily; wines that combine fruitfulness and refreshing acidity. The Curatolo Arini is a wonderful example of this modern expression of Grillo. Light straw-yellow in color with greenish highlights, this pretty wine offers a rich bouquet of tropical fruits, with hints of papaya and Mediterranean herbs. On the palate, it has a balanced structure with a pleasant freshness and a long sapid finish. This is a perfect wine for all types of shellfish, sushi, and oysters or even with a slightly spicy and aromatic chicken korma.
