This is legit California Cabernet Sauvignon at a price that is almost unbelievable. We’re not sure precisely what vinous wizardry was involved in the production of this wine from vineyard sources in Lake and Mendocino counties, but our newsletter tasters were blown way. Here’s what we do know about the making of the wine: the grapes were harvested in the cool early morning hours and carefully sorted before undergoing a gentle destemming process. The fruit then underwent a cold soak to extract maximum color and flavor. Fermentation took place in small stainless-steel tanks. Following fermentation, the wine was aged for 10 months in a selection of 80% American and 20% French oak. Somehow, this wine costs less than $10! The flavor profile is classic Cabernet Sauvignon. Cassis, plums, and other dark fruits are swaddled in gentle tannins on a full-bodied frame with a lively streak of acid. Throw some steaks or burgers on the grill, pop the cork, and enjoy this spectacular value.
