The idea for Shaya started with one basic premise: work with authentic Verdejo grapes to make an authentic Rueda wine. Nestled on a parcel of land near Segovia, the bodega is located in the heart of Rueda. These are high-elevation, old-vine vineyards on stony, limestone-rich soils with large day-night swings in temperature. The warm days ripen the fruit but the cold nights that follow help preserve the refreshing acidity in the grapes. Excellent as an aperitif and versatile at the table, this wine pairs with all sorts of fish, vegetables and white meats. Delicious and versatile - sounds like the Shaya Verdejo should become one of your everyday white wines of choice. But don’t take our word for it, wine critic Josh Raynolds awarded the Shaya Verdejo 91 Points and had this to say: “Pale, green-hued yellow. An incisive bouquet evokes Meyer lemon, nectarine and pungent flowers, and a minerally accent builds with air. Energetic citrus and orchard fruit flavors are underscored by a vein of chalky minerality and turn deeper through the midpalate. Spreads out steadily on the long, silky finish, which echoes the citrus fruit and floral notes.” Yum.
