Viognier can sometimes feel criminally underappreciated. Vinified properly, it makes a dry, lighter-bodied, intensely aromatic white, bursting with vivid fruit flavors, best enjoyed young. (This may surprise some, but Viognier is thought to be a cousin of Nebbiolo, another grape known for its intense, complex aroma). This Pays d’Oc Viognier yields all the requisite scents and flavors of fresh peach, apricot, and citrus, with a bit of tropical fruit and candied orange peel to round it out. Pair this with something fresh and green (spinach and pine nuts tossed in a light balsamic vinaigrette, blanched asparagus with lemon and black pepper) or with something that pairs tropical notes with savory ones (coconut curry, banana curry or even Hawaiian pizza).
