Overlooking the Gulf of Corinth, about 100 miles west of Athens, Theodora Rouvalis tends vines of native Greek varietals in terraced vineyards at altitudes up to 1100 meters. This considerable elevation combined with unique sandy loam soils on a bed of calcareous rock coalesce to produce wines of singular vitality and vigorous structure. An area of some seismic activity, marine fossils (such as those found in the Loire Valley) are not uncommon despite the marked altitude. All in all, there are few places like it on Earth! Theodora’s “Asprolithi” is 100% Roditis: a variety somewhat unfairly associated with unremarkable whites and ever-polarizing Retsina. This bottling shows Roditis’ significant potential. Alluring and rather unorthodox in the gamut of white wine, “Asprolithi” shows delicate white florals in the nose followed by layers of citron zest, ground cherries, and a spicy mineral edge. This is truly inspired winemaking, charged with assertive energy and a waxy seriousness to the viscosity.Pair it with Mediterranean salad with feta, Haloumi, or a nice orzo primavera.
